DMR (“Double Maturation”): an over-ripening in the plant before to the collection. It consists in cutting the fruiting cane about two weeks before the harvest itself. It is called double maturation because besides the maturation due to the increase of the concentration of sugars, a breathing of the grape’s organic acids occurs and it gives the fruit a very intense flavour, sweet and savoury. The collection is done once the technological maturity of the grapes is reached.
Innovative technique of vinification through maceration without sulfur dioxide. They use a exclusive sparkling method that goes directly from the must to sparkling wine (Il Colle Method). It permits to use a incredibly low percentage of sulfites before bottling.
The perlage is very fine, smooth and generous foam. Scents of fruit which reminds to pear, with green and flowery hints. The taste is dry, smooth and slightly acidic.
Ideal as an aperitif, perfect with fish meals, especially oysters and shellfish.
