Mace is an "aril", that is, a lamellar film that wraps the nutmeg kernel (which in turn contains the seed that we use in cooking). Fiery red in color when fresh, once dried it becomes yellow/orange.Mace has a flavour similar to that of nutmeg, but lighter and more refined.
It is used for soups, sauces or white fish. Swedish cuisine uses it in spiced biscuits, cakes and even meatballs. It is also very suitable for ravioli fillings.
