Tellicherry black peppers are grown on the slopes of the hills east of Tellicherry, an Indian town in Kerala, and only the largest, most regular berries can be included in this pepper denomination. The pepper has a dark brown colour, an intense aroma and a strong spiciness. It is picked when the berries take on a colour that turns from green to yellow/orange, exactly when the ripening phase begins.
Tellicherry peppers have a particularly interesting aroma, with spicy and resinous notes while the spiciness is intense and persistent. They are an all-purpose pepper, we suggest pairing them with red meats cooked on the grill, pork and tasty fish.
