The scent of the voatsiperifery pepper is reminiscent of black pepper and cubeb pepper, with earthy notes but also with hints of fresh citrus and mint. The taste is pronounced with a strong character, but nevertheless less spicy than black pepper.
The area of production for the voatsiperifery pepper is quite limited (only Madagascar) and the cultivation and harvest are difficult and demanding. The vines of the plant grow very tall and bring the small and delicate fruits to a height of approximately 15 meters where they must be harvested manually with long ladders. It grows in the wild practically only in the forests of Madagascar. The berries are small and dark brown in colour, with the characteristic stalk attached.
It is undoubtedly a very rare and rather expensive pepper. For connoisseurs or for those who want to experiment in the kitchen! To get the most flavour out of this pepper, we recommend to grind it in a mortar.
