Premium Cantabrian anchovies from the waters of northern Spain, wild-caught between early March and late June via sustainable fishing techniques and delivered fresh to the factory, presalted, cured in a "salmuera" brine of water, fat, and sea salt (Sicilian technique introduced by Italian masters who moved to region at the beginning of the last century), and ultimately hand filleted and packed in olive oil. Cantabrian anchovies are prized for their quality, meaty fillets ranging in colour from reddish brown to light caramel with a flavour that is the ideal balance of oil, sea salt and fish. A rightful dish on its own.
Anchovies are particularly rich in nutritional values. They are an excellent source of quality protein and especially omega 3, allies of cardiovascular health (they help control cholesterol, triglyceride and blood pressure levels). Among the vitamins there are above all those of group B, among which the presence of riboflavin (B2) stands out, which participates in numerous metabolic and energetic reactions fundamental for our health. Anchovies have a precious content of mineral salts including: calcium, which is important for the health of bones and teeth; iron, for the health of red blood cells; selenium for antioxidant defenses and phosphorus, for the health of bones, muscles, heart and memory.
