“Dop” extra virgin olive oil has an intense clear golden yellow colour, with warm green highlights. The scent is large and harmonic, characterized by elegant vegetal notes of artichokes, wild cardoon, lettuce, selery and balsamic parseley and basil. The taste is rich with unripe tomato, wild chicory, white apple and sweet almond avour. Bitter and spicy but balanced.
