Celery Seeds – an intensely aromatic spice for classic and international cuisine
Celery seeds are tiny but highly aromatic, with a distinctive celery flavour and a slightly bitter, spicy character. They are the seeds of Apium graveolens, commonly known as celery. While in Europe celery is primarily appreciated as a vegetable and as one of the classic ingredients forming the aromatic base of many dishes, together with carrot and onion, in India the plant is cultivated largely for its seeds, which are widely used as a spice.

How to use celery seeds in cooking
Despite their small size, celery seeds have a wonderfully concentrated flavour, so only a small amount is needed to add character to a dish. They are particularly well suited to sauerkraut, pickles and potato salads, and are a familiar seasoning in both German and Hungarian cuisine.
Celery seeds can also be used to flavour homemade bread, savoury biscuits and baked goods, as well as cooked vegetables and pulses. They can be used whole, or lightly crushed in a mortar or ground if you prefer the seeds not to remain whole in the finished dish. Bear in mind that grinding releases their aromas more fully and results in a more intense flavour.
Celery seeds are also an essential ingredient in celery salt, a classic seasoning for the quintessential Bloody Mary.
