Ancho Chilli – A Mild, Flavourful Classic of Mexican Cuisine
Ancho chilli is one of Mexico's most popular dried chillies, widely used in everyday cooking and traditional recipes. It is made from the large poblano pepper, which develops a distinctive deep chocolate-brown colour as it dries. Although relatively mild in heat, ancho chilli offers a rich, complex flavour, with fragrant notes reminiscent of ripe red fruits. These qualities make it an essential ingredient in many traditional Mexican dishes and sauces. Mildly hot, making it an excellent choice for anyone who enjoys the depth and character of chilli without excessive heat.
A versatile staple of Mexican cooking, ancho chilli is an excellent choice for bringing authentic flavour, gentle warmth and aromatic depth to your kitchen.

How to use ancho chilli in cooking
Before using, try briefly toasting the dried chilli in a dry, non-stick frying pan. This helps release its fragrant aromas and brings greater depth to its flavour. Take care not to burn it, as this can result in an unpleasant bitterness.
Alternatively, open the chilli, remove the seeds and soak it in warm water until softened. Blend the rehydrated flesh, adding a little of the soaking water if needed, to create a smooth chilli paste. This can then be used to enrich Mexican sauces, salsas and slow-cooked dishes.
Ancho chilli works particularly well in bean dishes, braised meats and hearty stews. Its deep, fruity character adds complexity and warmth without overwhelming the other ingredients with heat.
