"L'Olio del Nonno Salvatore" by Le Tre Colonne is a monovarietal extra virgin olive oil made from the cold pressing of the bella di cerignola cultivar, an indigenous cultivar appreciated throughout the world for its great quality. To make this peculiar product, the olives are harvested at the first light of dawn between October and December using mechanical aids and then pressed in the oil mill within a few hours of harvest.
