Le Tre Colonne's Classic extra virgin olive oil is a blend of two typical Apulian varieties, coratina and ogliarola, grown in the area of Agro di Giovinazzo and are harvested in December with mechanical aids. They are processed in the mill within 24 hours of harvesting, using the two-phase continuous cycle system.
Classic extra virgin olive oil has a golden colour with green hues and a bouquete of light herbaceous notes. The palate is medium fruity with balanced spiciness and bitterness.
