Quattrociocchi whole black olives are produced from the renowned Itrana olive variety, one of the finest table olives native to the Lazio region of central Italy. Grown around the Pontine Hills and the town of Itri, Itrana olives are celebrated for their fleshy texture, rich flavour and exceptional versatility. The same variety is also used by Quattrociocchi to produce its internationally acclaimed Olivastro single-variety extra virgin olive oil.
Itrana is a late-ripening olive cultivar, harvested only when fully mature, typically towards the end of winter or in early spring. At full ripeness, the olives develop their characteristic deep purple-black colour, tender flesh and complex Mediterranean flavour. The other, better known name of Itrana olives is Gaeta, which has DOP (PDO) protection in several provinces of the Lazio and Campania regions.
The olives are preserved in natural brine using a traditional Italian method of slow maturation, allowing them to develop a pleasantly savoury taste with gentle bitterness and delicate lactic notes. Their soft, meaty texture makes them an excellent addition to antipasti platters, pizzas, pasta dishes, seafood recipes, Mediterranean salads or simply enjoyed with an aperitif.
How to store: Once opened, pour into a glass jar with a tight lide and make sure the olives are covered by their water, keep refrigerated and eat it within a few days!
