Oliveri dried porcini mushrooms are true cupboard essentials, celebrated for their distinctively woody aroma that sets them in a class of their own. These small, dark, mature porcini are carefully selected, sliced, and traditionally dried after harvesting, a process that preserves their rich fragrance and deep, earthy flavour. Classified as 'special' grade Boletus edulis, these mushrooms are young and medium-sized, with colours ranging from creamy beige to hazelnut brown. They are known for their pronounced, typical porcini taste, ideal for enriching side dishes and savoury fillings.

Once rehydrated, they develop a tender yet substantial texture, perfect for stirring into risottos, pasta, farro dishes, and more. Finely chop and add them to a carnaroli risotto or incorporate into a rustic ragù.

How to rehydrate porcini:

  • Rinse the dried mushrooms thoroughly under running water to remove any grit.
  • Soak them in warm water for at least 15 minutes.
  • Strain and reserve the soaking liquid—it's full of umami and adds depth to soups, stews, and sauces.
  • The drained mushrooms are now ready to use!
  • Cook them gently for no more than 15 minutes to retain their firm texture and aromatic flavour.
