A truly distinctive aioli that takes the classic Mediterranean garlic sauce to a whole new level. Made with fermented black garlic, this luxurious aioli delivers a silky, creamy texture and an exceptionally rich umami flavour that instantly elevates any dish.

Black garlic, also known as black allium, is produced through a slow fermentation process in which whole garlic bulbs are aged for around a month under carefully controlled temperature and humidity conditions, without the use of additives or preservatives. The result is a soft, almost velvety garlic with none of the pungency or sharpness associated with raw white garlic. Instead, it develops a naturally sweet, complex flavour profile with notes reminiscent of balsamic vinegar, molasses and dried fruit.

Beyond its remarkable taste, black garlic is also widely regarded as a superfood thanks to its naturally high antioxidant content. Several studies conducted in Japan suggest that black garlic may contain up to twice the antioxidants found in traditional white garlic, while also being naturally low in fat and rich in minerals, fibre and protein.
