Kerala is a region in southern India where different forms of coconut (oil, milk, flakes) play a very important role in the cuisine. The Kerala Curry spice mix, very rich in its composition and yet extremely balanced in taste, recalls the typical flavours of the region due to the presence of coconut flakes. It is a delicate curry that goes well with meat and poultry, but especially with fish and legumes. Also excellent for flavouring a minestrone or a vegetable cream, or for dipping sauces such as mayonnaise.
