A delicate fruity oil obtained from the Moresca variety. The olives are harvested by hand in the Noto territory, in south-eastern Sicily, from south-facing old plantations at 450-550m above sea level.
Soft fruity in the nose with hints of green apples, freshly cut grass and green almonds. The palate is well-balanced, slightly bitter and spicy.
Ideal for raw fish, fried calamari, steamed fish, seafood salad, polenta.
