100% nocellara monocultivar, which gives this premium extra virgin olive oil good aromatic intensity and a balanced relationship between bitter and spicy. The colour is green with gold highlights. Recommended food pairings are meat and fish carpaccio, vegetable and legume soups.
The olive groves are located in a flat area with temperate climate and medium texture clay soil. which is fertilized with organic fertilizers and by burying the legumes grown in the these same groves. The spontaneous herbs are removed through light harrowing and the pruning residues are chopped and left in the field to enrich the soil with organic substance. The harvest is carried out by hand at the end of September/beginning of October and the processing takes place within 1 hour of harvesting.
