Capocollo, 1kg

Capocollo is the pork meat set between the head and the loin. Before being bagged inside natural casing, the meat is salted and massaged, thus to well get the salt inside adding spices and aromatic herbs. Apple and fig works perfectly with it, but even with just a slice of bread it's a simple way to enjoy.
