Ingredients

Marroni chestnuts, sugar, glucose-fructose syrup, natural Bourbon vanilla extract. Gluten-free product.

Agrimontana's chestnut products are made only from selected Italian chestnuts. It is processed using an exciting and simple process that respects tradition.

The chestnuts are cooked at a controlled temperature in candiing syrup, so that the sugar concentration gradually increases. Traditional slow processes are preferred to preserve flavour and texture.

During sweetening, the chestnuts are enriched with the intense and long-lasting scent of Madagascar vanilla and cane sugar from Mauritius and the Reunion Islands, and finally roasted.

Our recommendation:

Perfect for making marron glacé (from Northern Italy and Southern France, candied and glazed chestnuts in sugar syrup), creams, mousse, ice cream, and cakes.

The origin of the chestnut is not only a value for the company, but also an important aspect in terms of its use in gastronomy. Agrimontana offers its own selection from the Tuscan-Emilian Apennines to guarantee professional quality.

The chestnuts are processed fresh, without the use of sulfur dioxide, according to a process they call "curatura". The so-called "novena" step is the first, which is a nine-day maceration process. The chestnuts, still in their skins, are then "pampered" to obtain the consistency that makes the subsequent peeling and "candying" phase optimal. Peeling is completed by hand using an exclusive steaming method.
