Thomas McNaughton graduated as a chef from the Culinary Institute of America, then honed his skills and gained experience alongside many professionals in restaurants such as La Folie (permanently closed), Gary Danko and Quince. He visited some European countries, some Michelin star restaurants in France, and worked in Germany and Italy. He is impressed and recognized by the work of local farmers, producers and artisans. Before starting the "Flour+Water" restaurant project, he used the time he spent in the pasta factory in Bologna to learn and perfect the science of artisanal pasta making and its shaping.
