Elegant and expansive, characterised by the scent of olives and cut grass, as well as hints of artichokes and green almonds. Sweet upon initial impact, it then reveals a decisive but contained bitterness and an intense, persistent hint of pepper, as well as tickling the taste buds with a persistent sensation of vitality.
It expresses all its personality on simple grilled bread, but it is also ideal served raw with meat, soups made from pulses, wheat, meat carpaccio, and hearty pasta and rice dishes.
